Chef Brian
Chef Brian Polcyn is an award-winning chef and charcuterie expert.  Chef Polcyn is nationally recognized for his creativity and culinary talents and as the visionary behind some of Detroit’s most acclaimed restaurants.

He is the Chef/Owner of Cinco Lagos in Milford and Forest Grill which is located in Birmingham, Michigan. Chef Polcyn has been a part of the restaurant scene in the Detroit area for many years starting at the Golden Mushroom under Certified Master Chef Milos Cihelka. Other restaurants that have followed his name have been the Lark, Pike Street, Chimayo, Acadia, and Five Lakes Grill.

Cinco Lagos opened in August 2009. It is Chef Polcyn’s return to his Mexican roots (Chef Polcyn is both Mexican and Polish). He was also motivated to open Cinco Lagos because his favorite out of all the restaurants that he has owned was Chimayo, which he opened in the early 90’s in Pontiac. Chimayo was a New Mexican/Mexican style restaurant that embraced his Hispanic heritage. Polcyn’s family roots are from Guadalajara, Mexico. He is eager to share the cuisine of his family with the community in Milford, MI.

Chef Polcyn is also a faculty member at Schoolcraft College where he teaches charcuterie.  He is involved with many local charities such as Michigan Chefs Against Hunger, Share Our Strength, Children’s Leukemia Foundation of Michigan, and National charities like the Taste of the NFL.  Giving back to the community means a lot to him.

Chef Polcyn and his wife Julia have five children. He enjoys spending time with his family. When he is not in the kitchen, at school, or with his family you can find him in the skies – Chef Polcyn is a licensed pilot.
